Destemmed, cold soaked for 24-36 hours, fermentation for 12 days, no malolactic fermentation, aged in 100% stainless steel, fining and filtration

Location: Elqui Valley borders the Atacama Desert, the best place in the world for stargazing because there is so little water vapor in the atmosphere. Elqui is one of the newest regions for producing wine in Chile; long home to the best Pisco grapes, they have successfully ventured into the extreme terroir over the past 15 years.

"(Made from vines that are reportedly over 70 years old): Bright straw. Intense, mineral-laced green apple and quince scents, with jasmine and white pepper nuances adding lift. Dry and precise on entry, then fuller in the mid-palate, offering vibrant citrus and orchard fruit flavors and a biting note of ginger. Closes on a spicy note, with good energy, focus and length."
