Winemaking Notes: The hand-picked grapes for this vin de liqueur were de-stemmed, crushed, then cold soaked in a wooden vat to extract maximum color and flavor. Fermentation took place for three to four days and was stopped by fortification with grain/wine alcohol. The wine is then macerated and passed through oak barrels.
Tasting Notes: This vin de liqueur exudes powerful aromas of black fruit, fresh fruit and dried fruit with nutty notes of walnuts and grilled almonds. On the palate, its delicate fruitiness balances out the powerful tannins.
Food Pairing: Serve chilled with a chocolately dessert of stinky cheese. Try Chocolate Pudding, Roquefort Cheese
About Madiran: Situated and the base of the Pyrenees in southwest France, Madiran has been producing intense, tannic reds from the Tannat grape since 1948, when it became an official AOC (Appellation d’Origine Controllee). The Madiran region has been planted to grapes since the first century BC. During the 11th century, the Benedictine monks founded the Abbey of Madiran and further developed the vines. Soils are mainly clay and limestone, and the nearby Atlantic Ocean provides its rain. The wines traditionally can be bracingly tannic in youth, but many winemakers are experimenting with various techniques and blending to create softer versions. Most of the wines are blends of these four grapes: Tannat, Bouchy, Pinenc, and Courbu Noir, though some of the appellations top wines are made from 100 percent Tannat.
