Winemaking: Traditional "Champenois" pressing. Only cuvées (first pressing) are retained. Alcoholic fermentation in stainless steel vats under temperature control between 16 and 20°C. Full malolactic fermentation done. Wine is aged in bottle on yeast for 3 years deep in the famous "Crayères" where the temperature stays at around 10 and 11°C. Dosage is 8g/l.
Tasting Notes: Straw gold color with light bubbles. Dried biscuits and chocolate aromas. Wine is soft in the mouth and rich and well-structured. To bring out the best in this wine, try a saddle of young rabbit with new vegetables, a double veal chop or, more unexpectedly, soft cheeses such as brie or camembert or perhaps comté or reblochon.

Champagne Duval-Leroy (375 ml) NV Brut, Champagne AOC
Rating: 90
A firm version, with an open-knit texture and chalky undertow, featuring a subtle
mesh of persimmon, white raspberry, honey, blanched almond and apricot notes.
Delicate finish.

Champagne Duval-Leroy (375 ml) NV Brut, Champagne AOC
Rating: 91
There's a creamy edge to the quince, biscuit, honey and ginger flavors in this well-cut Champagne, which help to balance the firm acidity. Vibrant and expressive, with a zesty finish. Drink now through 2014
