About 'Dance of Discovery' Junmai: 'Dance of Discovery' is made with a recently developed rice that is only used in the Shimane Prefecture, called Kannomai. Kan is the character for god, and mai can mean dance or stage. Rihaku is one of Vine Connection's best selling brands, and one reason is the thread of consistency that makes any product a distinctly clear part of the Rihaku family.

Tasting Notes: Textured and layered, smoky yet sweet, with a cleansing acidity at the end. Simply constructed rice flavors interspersed with malt-like flavor and dry on the finish thanks to the prominent acidity. Food pairing suggestions include smoked chicken, red rice and pumpkin salad with basil; sweet potato gnocchi with crispy sage and brown butter; roast pork loin with apricot and fennel.

About Rihaku Shuzo: Rihaku proudly boasts the highest average rice milling rate of all Japanese sake breweries. The toji continues to use the same traditional methods as they did in the late 1800’s; except now they employ the help of selective technology which results in a better sake. Rihaku’s koji-making machine uses metal “fingers” to mix the koji every few hours, which allows for tighter control of temperature and moisture resulting in cleaner and more consistent koji. Rihaku is located in the Shimane Prefecture, the Toji is Mitsuo Yoshioka, and president is Yuichiro Tanaka.
