About the Sake:
'Sword of the Sun' is the little brother of 'Soul of the Sensei' as it
is very close to being a ginjo but with reigned in flavors and aromas.
'Sword of the Sun' sake is easily one of the best bangs for the buck of
any sake product in Japan of the U.S. Melon, pear and banana drive the
aromas and combine with a subtle sweet touch highlighted by a subdued
acidity in the butter-tinged flavor. Great depth and plenty of
complexity. Try it with grilled Siracha-buttered shrimp, or roasted
beets and farro salad with microgreens and white grapefruit vinaigrette.
About Doi Shuzo: Doi Shuzo has been brewing sake for
four generations in Shizuoka near the ruins of Takatenjin Castle.
President Kiyoaki Doi is the fourth
generation leader of Doi Shuzo, which
was founded in 1868 and is located in
the Shizuoka Prefecture. Upon taking
the reins from his father, he was told,
"You can brew more sake than we do
now if you like, or you can brew less.
But whatever you do, never let the
quality of your sake fall." Toji Shokichi
Hase stays true to this advice - his clean,
dry and rich brews are considered some
of Japan's most highly regarded sake.
The brewery also takes great care in
energy use and is solar powered.
