About Albariño: Until 1989 Albariño was one of the rarest wine varieties in the world, rarely glimpsed outside the Iberian Peninsula. Since that time, this light yet vibrant white grape has become a darling of wine geeks worldwide for its preternatural ability to pair with all types of seafood, cheese, and salty dishes.

Winemaking Notes: Bonny Doon farms sustainably to restore vital life-forces to their soil and to promote the farm as a self-sustaining organism. Their winemaking practice is exceptionally light-handed with minimal intervention —unplugged or “acoustic.”

Tasting Notes: This Albariño expresses a beautifully crystalline mineral aspect with great persistence. Bracing aromas of lemon rind, grapefruit, pineapple, and peach telegraph a lively acidity. Extended lees contact gives the wine an exquisitely silky texture that’s almost savory. Perfect as an apéritif and wildly appropriate with Asian food or shellfish.

Ingredients: grapes and sulfur dioxide. In the winemaking process, the following were utilized: Indigenous yeast, yeast nutrients, and bentonite. At the time of bottling, this product contained 70 ppm total SO2 and 25 ppm free SO2 .
