Winemaking Notes:The grapes for this Pinot are growin in the Ortenau subregion on the right bank of the Rhine River. Vineyards face southwest and the soil is weathered granite. Grapes are hand harvested to maintain the best quality and color. They are then destemmed completely and undergo cold maceration. Fermentation, partly with wild yeast, happens in stainless steel (with pump over and mash-punching). The temperature is controlled with cooling paddles. Five to ten percent is aged in small new French barrels, while the rest in large barrels.
Tasting Notes: Dark cherries, spice, a hint of chocolate, and a touch of smoke.
Food Pairing: Warm German Potato Salad
About Baden: Germany’s longest wine region, Baden borders both France and Switzerland. Its warm, southern climate has success with red wines that are higher in alcohol, and it is a stronghold for the pinot varietals Spatburgunder and Grauburgunder. It encompasses some of the Black Forest, where rainfall can be heavy.
