'Ombroso' Superiore Riserva is produced only in the best vintages.
Winemaking Notes: Soft press and destemming. Fermented in stainless steel tanks at a maximum temperature of 30°C. Prolonged skin-contact maceration is allowed. The wine spends 12 to 15 months in French Barriques and Tonneaux - 50% new, and 50% of second and third year. Following a very light filtration the wine rests in the bottle for over 1 year, before release.
Tasting Notes: Deep ruby red. Mineral nose with prominent hints of licorice root and graphite, and more delicate fruity notes. Texture is more based on depth than on extract. The full-flavored, mineral character progressively dissolves in the sweet fruity notes.
