Winemaking Notes: The juice is extracted with infinite care from the air-bag press. The slow, gentle pressing avoids crushing the stalks and seeds. Fermentation occurs naturally with native yeast in stainless steel tanks. The wine is matured on its lees in large barrels for six to nine months. The lees-contact contributes richness to the wine. The oxygen that passes through the pores of the wood opens up the wine aromas. The wine is aged in bottle for about one year before released to the market.

Tasting Notes: Fruit of bergamot, then Jasmine with nutmeg on the finish. Serve with asparagus, ham, prawns with pistachios, and gazpacho.
