Winemaking Notes: From several small family-owned parcels of Pinot Noir, which Cédric cultivates with his father, he produces 750 cases of a cuvee he calls “Inflorescence.” This 2006 La Parcelle is from the lieu-dit Côte de Béchalin. The grapes are harvested by hand. Once harvested, the grapes are squeezed three times by foot; only the first press is kept, which has the best quality and the richest aroma. After the first fermentation, which employs only indigenous yeasts, the wine is not filtered but purified with the old method of natural purification. The wine stays on average 3 months in vats before bottling. The bottles are then stacked in a round-shouldered cellar and kept at the average temperature of 10 degrees Celsius. Bottle fermentation takes place (with no dosage) in about two months, the time necessary to obtain its beautiful bubble, which is very fine and of high quality. Bottles stay in the cellar until disgorging.
Tasting Notes: Intensely layered expressions of strawberry, raspberry, plum, and earthy mushrooms. There is lots of freshness to the 2006. The wine has more precision compared to the fat 2005.
Food Pairing: Try Basque Mushroom Toasts
