Vineyard Information: 35 to 45 year-old Sauvignon Blanc vines on the middle of the south-facing slope of Kimmeridgian marl that is Monts Damnés in Chavignol. Monts Damnés is one of Sancerre’s most renowned vineyards. Boulay’s vines are in the steepest section of this famously steep south-facing, chalky-soiled vineyard and everything in the vineyard, from pruning to harvest is done by hand following organic practices. Grapes are picked by hand and fermented using ambient yeasts, both distinguishing marks in Sancerre today.
