Winemaking Notes: The wine undergoes a long maceration of 3 weeks and is then separated between stainless and 1 yr old oak (50% each). The wine is then blended together after 10-12 months. 

Pairing Suggestions: Pair this wine with a rack of lamb, braised pork, pheasant/game birds, hard cheeses like pecorino or comté and dishes flavored with rosemary and thyme. 

Location: Montauriol is a lieu-dit right next to the vineyards where they make Foncalieu's Boutenac called "La Vigie" sharing similar red pebbly limestone and gravel on a steep south facing slope facing the village from across the D613. It is perhaps the most aromatic of their Corbières, with perfumes of violets, thyme and rosemary found everywhere around the vineyard. Under constant attack from wild boars, Montauriol gets riper faster than its neighboring vineyards and the boars seem to have figured this out...
