Cascina delle Rose Barbaresco 'Rio Sordo' Winemaking Notes: The skins remain in contact with the must during the first fermentation. Pumpover occurs for 12-14 days to keep the skins submersed. Malolactic fermentation is done in the cellar at the temperature of 20° C. Wine is aged in traditional big Slavonian oak casks of 10 – 17 hl for 22 months, and for a period in bottle. No filtration and clarification.
Cascina delle Rose Barbaresco 'Rio Sordo' Tasting Notes: Brilliant and transparent garnet red, clean and sharp dark fruits, sweet species, Mediterranean scrub and undergrowth. Dense tannin, good structure and depth, elegant and austere. Long, persistent finish.
