Winemaking Notes: Grapes are harvested by hand at very good ripeness. First fermentation occurs in tank, then the wine is bottled with 20g/l of sugar for the second fermentation. Bottle is disgorged by hand. Wine is not filtered or fined. No SO2 is added.
Tasting Notes: Essentially a Blanc de Noir, this is fizzy Pineau d’Aunis; a wine you never knew you needed but can’t live without! Red fruits abound with a shimmer of telltale white pepper.
