About the Wine: Very limited: won’t last long! Second vintage of this
Pinot Gris and some of our winemaker’s favorite fruit to
come in this harvest!
Winemaking Notes: The grapes were brought in and whole cluster pressed.
The juice was settled out for a day or two before being
racked off of the gross lees and into a small stainless
steel fermentation tank. A prolonged cool
fermentation is particularly important in capturing the complex volatile aromatics of Pinot Gris. After fermentation was completed,
which was about six months, the wine was gently moved
off of the lees and fined for clarity before a final filtration prior to bottling.
Tasting Notes by Chris Blanchard, MS: "The nose is so expressive and beautiful with a creamy
aromas of fresh lychees, chopped basil, vanilla candles,
cream soda and orange dreamsicles that remind me of
being a kid.
The mouthfeel is rich and ripe, mouth coating and glycerol, but with a slight bitterness and fresh acidity. That
same creamy dreamsicle note can be found in the mouth,
with fresh grass, basil, apricot, lemon curd, vanilla and
guava and a long fruity finish.
A very satisfying wine, that would pair well with heavier white meat dishes like pork tenderloin or chicken in
cream sauce and particularly with scallops, coconut,
fried shrimp or sweetbreads and morel mushrooms."
