Winemaking Notes: Made using the traditional Champagne method with second fermentation occurring in the bottle. It is then aged on its spent yeasts for 6 months. The brewing happens at St. Marcel, in the historic brewery La Valdôtaine, and at Novalaise, the heart of Savoy. The orchards used for apple production are more than one century old. They are planted at the Valdostan slopes, and cultivated with no chemical treatment.

Tasting Notes: The cider has a beautiful flaxen color with pale green nuance. It exudes aromas of apples and white flowers, with a rich body, dry finish, and a great minerality. Serve in an earthenware bowl or deep glass for better aeration--not in narrow flutes.

About the Valle d’Aosta: Italy’s smallest region. Long, narrow valley formed by the river Dora Baltea, through the mountains of Italy’s extreme northwest on the border of France and Switzerland. The terrain is extremely steep and rugged, and vineyards generally must be terraced into steep slopes of dizzying heights. The region is responsible for quite a small production, with only about 6K hl earning the DOC status. Most is sold to the tourist trade that thrives in the Valley. Two most important native varieties are Torette and Blanc de Morgex. Other Varietals to be found are Nebbiolo, Dolcetto, Petit Rouge, Fumin, Pinot Noir, and Muller-Thurgau, among others.
