Winemaking Notes: Cider is made in the ancestral method which involves no outside yeast to induce fermentation. This cider is born from the
marriage between the Raventze apple (cultivated in Aosta Valley
at La Salle, Saint Marcel and Antey) and the Coison de Boussy apple,
daughter of the Arve Valley in the High Saboya. Following the Occidental Alps' tradition, during the first squeeze of the apples, the pear Blesson gets added. The cider only goes through natural treatments and may result in some sediment.
Tasting Notes: Fresh
citrus, bright green apple, balanced with the mellow sweetness of pear.
The sparkler has a crisp, refreshing bite. Best when served in an
earthenware bowl with ample aeration. If glass is used, it is recommended to use long, water glasses instead of narrow flutes. Try pairing with pizza. About Valle d'Aosta: Italy’s smallest region. Long, narrow valley formed by the river Dora Baltea, through the mountains of Italy’s extreme northwest on the border of France and Switzerland. The terrain is extremely steep and rugged, and vineyards generally must be terraced into steep slopes of dizzying heights. The region is responsible for quite a small production, with only about 6K hl earning the DOC status. Most is sold to the tourist trade that thrives in the Valley. Two most important native varieties are Torette and Blanc de Morgex. Other Varietals to be found are Nebbiolo, Dolcetto, Petit Rouge, Fumin, Pinot Noir, and Muller-Thurgau, among others.
