Soil Information: The soil profile is poor in organic matter yielding 6 pounds of grapes per vine. The granite and slate soil surface warms up during the day, providing heat to the roots, encouraging the grapes to continue ripening even during the cool nights. Lower yields result in more concentrated grapes providing more flavor intensity to the wines.

Winemaking Notes: After the best bunches are hand picked in the steeply sloped vineyards, the grapes are brought in small 15 kg boxes to the winery for de-stemming and crushing. The unfermented juice macerates on the skins for 8-12 hours. A slow fermentation takes place with the indigenous yeast of the grapes. The wine is fermented and aged in stainless steel tank without malolactic fermentation.

Tasting Notes: Made from the indigenous Spanish varietal Godello (planted in 1988, organically farmed vines), this shows a restrained yet intense minerality along with spicy, lemony, flinty, stony notes make for a fresh, medium-bodied, complex white to enjoy over the next year. This fresh, mineral-inflected Godello will pair well with swordfish sautéed in butter and wild herbs, grilled or pan-fried sweet veal or pork sausage, and a host of casual foods like tapas, pasta with white clam sauce or fried oyster sandwiches.

The 2012 Papa (100% organically grown Godello) was aged totally in stainless steel and saw no malolactic. It possesses the texture of a classy white Burgundy, as well as lots of honeyed citrus, spring flower, quince and apricot characteristics. Medium-bodied with impressive texture, depth and richness, its finish is fresh, vibrant and exuberant. This beauty is best consumed in its first several years of life. "Green-tinged yellow. High-pitched lemon/lime and honeysuckle aromas are complicated by notes of anise and chamomile. Dry and incisive, offering vibrant citrus and orchard fruit flavors and a hint of chalky minerality. Closes with firm cut and very good clarity, the lime note repeating."
