Winemaking Notes: Whole cluster, no cold soak, fermentation for 16 days, no pumpovers, 10% malolactic fermentation in barrel, no fining, filtrated
br>Terroir: The terroir of ViƱa Aquitania is characterized by a poor, well drained soil which allows roots to grow deep, and a micro climate which allows for very good exposure to sunlight, warm days, cool nights and no rainfall during ripening and harvesting. Irrigation during the development of the grapes can be strictly controlled. The vines are planted in 18 hectares running from North to South, on a slope in an East/West direction, at an altitude ranging from 675 to 721 meters above sea level. The vines are cordon trained at a density of 1.700 vines per acre. Due to the absence of Phylloxera, the vines are ungrafted, and spraying against diseases is limited solely to the use of sulfur.

Valley Information: Located 400 miles south of Santiago, Malleco is currently Chile's southernmost appellation. This valley was original explored as a test in the early 90s. The area has proven exceptional for Chardonnay and promising for Pinot Noir, although high rainfall and a shorter growing season make the area risky for most other varieties.

Picks up floral and anise notes with air and finishes with excellent clarity and lingering spiciness. Offers a lovely blend of richness and energy."
