Tasting Notes: This wine has a superb balance with hints of black fruits and spices, the balance and the delicacy of the tannins make it an elegant wine. Winemaking: Grape harvesting is done manually. Grapes are completely destemmed. Fermentation lasts over 3 to 4
weeks on an average, traditional winemaking makes use of indigenous
yeasts only. Grapes are pressed in a traditional wooden vertical press. The wine is not filtered, not
fined; one part remains in oak barrels for 9 to 18 months and the other
part in tanks.

"Serge Depeyre and Brigitte Bile have since 2002 directed this 13
hectare domaine on a terroir composed of clay-limestone and black
schists. Syrah, grenache and carignan have found this a great place to
express themselves, as witnessed by this cuvée which is perfect in every
way. The robe is a dark cherry color. The nose, very open, mixes
violet, black fruits and sweet spices. A supple and silky entry lead to a
powerful mouth without any heaviness, rich, ample, and dense, carpeted
with aromas of licorice, vanilla and jammy red fruits and built on very
finely grained tannins. A wine with great intensity to be tasted over
the next 3 to 5 years with a tasty lamb dish."
