It is generally believed that to achieve any good or great thing, some substantive sacrifice is required. In the instance of the production of fine wine, one imposes strict limits on the quantity of grapes to be harvested, with the aspiration of enhancing ultimate wine quality. The principle practice employed toward this aim is known as "green pruning" or "bunch thinning," whereby just before veraison—color change of the grapes—the crew is directed to remove some percentage of extant grape bunches. They are presumably then trod unceremoniously underfoot. If you are a European person, innately disposed to frugality, this practice causes a deep, almost existential pain.
However, by waiting just a tiny bit longer, until the grapes are fully colored but still screamingly high in acid, one might actually harvest this crop as verjus (or "green juice") and avoid the issue of profligate waste—and if a Calvinist, the potential wrath of God’s retribution.
Bonny Doon Vineyard Verjus de Cigare is produced in exceptionally limited quantity but of the very highest quality.
Tasting Notes: Verjus de Cigare is refreshingly tart on its own as a beverage, and can be mixed with sparkling water. It is also fabulous in culinary applications, for example in salads in combination with vinegar or citrus juice, and notably in sauce reductions or braises. It is a brilliant tool for the chef’s toolbox, and every chef we’ve spoken to has been exceptionally keen to give it a try. Stylistically Verjus de Cigare occupies the middle ground—neither excruciatingly tart, nor overly sweet; Goldilocks-like, it is just right.
