Winemaking Notes: Harvest done 60% by machine and 40% by hand. Native yeast fermentation, and wine is aged in stainless steel tank for at least 6 months before release. This wine is released young but can age for many years.
Tasting Notes: Pure, old-vine Romorantin grown on limestone. This rare bottling is fermented in tank and then allowed to age for a year in
tank before release. Honey and mineral nose with a very tightly wound,
vibrant mouthfeel.
About Cour-Cheverny:
The tiny appellation of Cour-Cheverny is centered around the city of
the same name in the Loire river valley. Situated just next to the
village of Cheverny, the A.O.C. of Cour-Cheverny restricts the
production of wines to a single varietal, Romorantin. An old, indigenous
varietal that has been planted in the zone for centuries, it now grown
on only 49 hectares in and around the village. As a varietal, it ripens
quite early and is often characterized by an almost waxy texture and
aromas of butter, flowers, and nuts when young which develop into notes
of wet wool and minerals as it ages. When produced from older vines, it
reacts well to aging in wood.
